It doesn’t have to be perfect to be good. These rolls don’t require much. You simply mix the dough when you have a moment.
The recipe is from @detserveres.
One you keep coming back to.

Recipe for approx. 16 pieces
Simple rolls
Ingredients
1 kg flour
1 tsp dry yeast
3 tsp salt
8 dl water
1 tsp honey
Sesame seeds and/or poppy seeds
Flaky sea salt
Method
Combine the flour, dry yeast and salt in a bowl and mix well.
Stir the honey into the water until fully dissolved.
Pour the water into the bowl with the dry ingredients and mix into a smooth, slightly sticky dough.
Cover the bowl with plastic wrap and let the dough rise at room temperature for 12–18 hours.
Preheat the oven to 250°C (conventional heat).
Lightly flour your work surface and turn out the dough. Divide into smaller pieces and shape into rolls.
Coat the rolls in a bowl with sesame seeds and/or poppy seeds and a little flaky sea salt.
Place the rolls on a baking tray lined with parchment paper and bake in the middle of the oven for 15–20 minutes.
The breakfast table doesn’t need much.
Something that gets used.
And keeps on lasting.
